Pour Mia Birau, Chercheur PhD à GEM, experte du comportement des consommateurs : « Le gaspillage alimentaire commence dans les supermarchés. Il y a une profusion de produits sur les rayons, et tous ne sont évidemment pas vendus. Le point de vente doit donc se débarrasser des invendus. Quand au consommateur qui repart chez lui avec des produits, nos recherches montrent que certains mécanismes psychologiques, largement inconscients, le conduisent à gaspiller. En cernant mieux les leviers psychologiques du gaspillage, nos recherches aideront les autorités publiques à réaliser des campagnes d’informations plus efficaces ».

On achète trop et on consomme mal

Les recherches de Mia BIRAU montrent que le consommateur veut se rassurer sur son niveau de vie, et conforter son image de "bon parent" prévoyant. C’est une des raisons pour lesquelles il achète trop. On observe également que les consommateurs sous-estiment le remplissage de leur congélateur et de leurs placards. Et il pense être en mesure de consommer tous les produits achetés avant la date de péremption.

Au moment du repas, il y a un conflit entre les motivations qui sont à l’origine de l’achat et l’inconscient du consommateur. C’est le souci diététique qui pousse à acheter une salade, mais une fois à table, on se laisse tenter par une pizza.  De la même façon, on achète un nouveau yaourt "pour changer", mais on continue à consommer ses yaourts habituels : le nouveau yaourt est à peine goûté.

Enfin, il y a la "gestion des stocks" : les recherches montrent qu’on cuisine d’abord les derniers produits achetés. Les produits les plus anciens sont inutilisés, puis jetés. D’ailleurs, l’existence d’un compost transforme quasiment en acte vertueux le fait de jeter.

Impact des campagnes publicitaires

Les campagnes d’informations contre le gaspillage alimentaire sont largement inefficaces en France. Le message est souvent culpabilisant. Quand, en revanche, le message met en cause les supermarchés et les restaurants, en affirmant qu’ils ont aussi leur part de responsabilité, le consommateur se sent moins coupable et est plus disposé à faire des efforts.

Les recherches de Mia BIRAU montrent aussi que le consommateur est disposé à faire plus d’effort s’il a le sentiment que l’effort demandé est facile. Les campagnes de sensibilisation devraient donc intégrer la notion de facilité.

Enfin, il paraît intéressant d’inventer une pédagogie de la date de péremption : cette dernière est trop souvent perçue comme une alerte immédiate sur la sécurité alimentaire du produit, alors qu’elle devrait être perçue comme un acte de gaspillage.

Oui aux produits moches

Les professionnels sélectionnent uniquement des fruits et des légumes aux dimensions parfaites, et jettent les autres. Pourtant, les résultats montrent que le consommateur est prêt à acheter des produits moches, car il a l’impression qu’ils sont naturels, locaux, sains, voire bio. Ces résultats montrent également que les consommateurs sont prêts à payer le même prix pour un produit déformé que pour un produit classique.

Notons que la prochaine étape de ces travaux de recherche consistera à évaluer jusqu’à quel niveau de déformation le consommateur est prêt à acheter les produits moches, et à quel prix.
